    For generations, a sprinkle of fresh green coriander has been the crowning glory of Indian cuisine, an indispensable garnish, a flavour enhancer, and often, a generous freebie from your local vegetable vendor. It was the humble dhaniya, abundant and affordable, an everyday luxury. However, recent weeks have brought an unprecedented shift, turning this common herb into a precious commodity. Across markets, the price of coriander has skyrocketed, breaching the ₹200 per kilogram mark in many cities, leaving home cooks and restaurateurs alike reeling. What’s behind this sudden, dramatic surge?

    **The Root Cause: Rains and Ruin**
    The primary culprit, as is often the case with agricultural produce in India, is the weather. Heavy and unseasonal monsoon rains have wreaked havoc on coriander cultivation across key growing regions. Coriander, while robust, is susceptible to excessive moisture, which leads to crop damage, fungal infections, and reduced yields. Farmers have reported significant losses, with entire fields submerged or crops rotting before they could be harvested. This extensive damage at the farm level has severely curtailed the supply entering the mandis (wholesale markets).

    **Disrupted Supply Chains and Lingering Effects**
    Beyond direct crop damage, the relentless downpour has also disrupted the intricate supply chains that bring fresh produce from farms to your kitchen. Waterlogged roads, transportation delays, and increased fuel costs for longer routes have added to the operational expenses, which are inevitably passed down to the consumer. Middlemen and retailers, facing reduced availability and higher procurement costs, have no option but to mark up prices. This cascading effect transforms a natural calamity into a pinch in every household’s pocket.

    **Impact on Your Plate and Pocket**
    The impact of this “green gold rush” is palpable. For the average household, a small bunch of coriander that once cost a mere ₹10-₹20 now commands ₹40-₹60, or even more, for a much smaller quantity. This forces home cooks to either ration their use of dhaniya or, in some cases, omit it entirely, altering the authentic taste of many dishes. Street food vendors, whose profitability often hinges on low-cost ingredients, are facing immense pressure. Aloo tikki chaat, pani puri, and countless other beloved snacks that rely heavily on fresh coriander for their characteristic flavour and garnish are becoming more expensive to prepare, forcing vendors to either absorb losses or pass on the increased cost to customers. Restaurants, particularly those specializing in Indian cuisine, are grappling with higher ingredient bills, threatening their margins.

    **Awaiting Relief**
    While agricultural markets are inherently volatile, the current situation with coriander highlights the delicate balance of supply and demand, easily tipped by environmental factors. Consumers are left hoping for a change in weather patterns, which would allow for fresh cultivation cycles and a subsequent stabilization or reduction in prices. Until then, your humble dhaniya will remain a symbol of the broader challenges faced by our food supply systems in an era of unpredictable climate. Perhaps it’s time to explore alternative garnishes, or simply appreciate the precious few sprigs that make it to our plates even more.
